Sorry this was shot with the camera handheld so it may be a little choppy- also these stuffed peppers baked for about 30 minutes. The pork used was left over from a pork loin which I slow roasted- the pork was rubbed with garlic powder, onion powder, paprika, cyan pepper, brown sugar, salt, pepper and coriander. It was then placed in the oven with some apple juice in the bottom of the pan and slow roasted at 225 for about 6 hours.

Casa Marin Winery

Casa Marin Winery, Chile
Chilean winery, Casa Marin, Pumping Out Quality and Variety
When offered the chance to review some wines from Chile, I was pretty excited. Over the years, wines from Chile have always appealed to me, thanks to their easy drinking nature and affordability. Five years ago or so, I started exploring some of the more serious producers that Chile had to offer and generally stocked my cellar with the likes of Vina Almaviva, Don Melchor, Montes offerings, along with Alpha M & Purple Angel, and Casa Lapostolle Clos Apalta. Big, red wines – single varietal or blended with Cabernet Sauvignon, Merlot and the famous Carmenere.

I shot this video several months ago and forgot about it – so here it is. Someone mentioned in this episode is Dale Cruse who is now(sorry this was shot before it started) embarking on having a glass of Champagne every day for a year- Check out his blog and on Twitter @DaleCruse for some entertainment – Yes I know he is not as adorable and charming as I am but hey go give a look anyway!

So we did the Hirtenkase cheese a little while back and after the episode published, I received word from my buddy Anthony Soriano about the reserve version of this cheese- I was intrigued to say the least and it turns out the reserve version is select cheeses that are then aged longer. Gourmet Library gets this cheese in from time to time so be on the look out for it.

Montepulciano: The City, The Grape… and Home to the Volturi.

Posted: July 2nd, 2010

I have spent a lot of time staying away from the Chianti-drunk of my youth, discovering new regions, grapes, sparklers, fortified wines, & the values that Italy has to offer. Eventually, the ole Chianti got shuffled to the side like those neon tight spandex bikers shorts worn in the 80’s. Okay, by worn I mean I wore them: wow, I just feel like I finished a 12 step program.

“Hi, I am Pat and I wore biker shorts in the 80’s – but I did not wear Z Cavaricci’s!” READ THE REST
