Pizza with Grilled Artichoke, Sun Dried Tomato & Mortadella – Episode 147
ByGenerally I do most of my pizzas on the grill but it was super cold and windy so I decided to park that pie in the oven. This was a quick pie made with some stuff we had in the fridge which came out very good. The Mortadella takes on a great flavor upon cooking so even if you do not like it normally I think you will enjoy it this way.

That sauce looked great…I frequently use wine to deglaze a pan after browning meat, and usually just reduce it down to cook the alcohol out. How do you tell when the alcohol has cooked out of a red sauce?

On an unrelated note, I am not sure how big a dessert fan you are, but have you ever tried/made a dessert style calzone filled with nutella and ricotta and topped with some powdered sugar? Insanely good…….

No doubt that the wine helps! The little guy is fun though he has been known to pirate the dough and take off running with it-

Yeah i get cravings for mortadella too and lucky the wife loves it so I never get any flack for buying it

n have not tried it that way- I make a fried ravioli with Nutella anc chick pea that is pretty good- but will def give the calzone thing a whirl
