As I was stumbling through Fairway trying to avoid the dreamy gaze of the cheese department workers I stumbled into this cheese- Literally- It was set up on a display and I walked right into while playing hard to get with the cheese department. I looked at it, picked up a piece and put it back but something called out to me “Hey big boy give me a squeeze” so I did and there was a great piece with a small rind and in this case yes size matters-
So to clear up what I mumble about in this video what I was saying is that in the price range of $12 a pound for this cheese rarely will a Parmegiano Reggiano deliver as much flavor as this Sovrano cheese- However when you get up into the higher priced Parm’s aged longer you gain a whole other level of complexity. So run and grab some of this cheese I think you will like it.
So we head to the hills of Germany for this cheese- Germany you say? Yes Germany! Why? Well….everyone knows Germany is famous for their cheese- Ok no one I know knows much about German cheese- not even my wife’s German side. I logged onto gourmetlibrary.com and decided to see what they had and low and behold this bad boy popped. No it is not the most complex cheese in the world however it is just damn good.
When you think German cheese you make think of Limburger and then you probably will want to throw up- Little known fact that mosquitoes are equally attracted to Limburger cheese as dirty feet- I looked it up! In fact they are placing pieces of Limburger cheese in Africa to attract the mosquitoes and keep them away from people. True story I found it on the internets and everything on the internets is true! But this was a Wiki so I am believing it.

So I do not often follow recipes very well but for this dish I figured it would be wise to try to stick as close as possible. This comes from the cookbook Gastronomy of Italy by Anna Del Conte, an encyclopædic work covering the topic from the Roman period to the present for which she was awarded the Duchessa Maria Luigia di Parma prize.
Alright so right off the bat the recipe called for Tuna steaks but I had Swai( type of catfish from Southeast Asia which tastes nothing like catfish) and the first ingredient on the recipe is prunes. Fine I went for figs- so – I know- you call this following a recipe- Well the rest is the same! Ok I added a little hot red pepper flake- Well I add that to everything you know- so that doesn’t count really- but the rest is the same I swear!
